The best oatmeal cookie recipe isn’t hard to find. It is printed on the lid of the Quaker oatmeal box. And it makes sense doesn’t it? Who would spend more time testing oatmeal cookie recipes to find the very best one than an oatmeal company? This is the same recipe that my mother used to make and it is still one of my favorites. It makes a thick chewy cookie that is full of plump raisins.
Vanishing Oatmeal Raisin Cookies
- 1 cup butter, softened
- 1 cup firmly packed brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. salt (optional)
- 3 cups of Quaker quick oats
- 1 cup raisins
Heat oven to 350°. Beat butter and sugars until creamy. Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon and salt; add to the butter mixture, mixing well. Stir in oats, raisins and nuts; mix well. Drop by rounded tablespoons onto ungreased cookie sheets. Bake 10 to 12 min. or until golden brown. Cool 1 min. on cookie sheet; remove to wire rack. Cool completely before storing in airtight containers. Makes 4 dozen cookies.
