What is up with store bought potato salad? Small chunks of potatoes drowning in an overly sweet, sloppy sauce. Everybody buys it because it’s convenient but nobody really likes it. Why can’t they make a potato salad like Mom’s?
It’s 11:59 p.m. on July 4 and I’m raiding the leftover potato salad bowl. My Mom makes the best potato salad. This recipe comes as close as I can get to replicating hers. If you grew up in the sixties, your mom probably made something like it. The magic ingredient is the Miracle Whip. No, you cannot substitute mayonnaise. It isn’t the same thing and the resulting flavor won’t be right. But even people who say they don’t like Miracle Whip seem to love this potato salad so give it a try.
Ingredients:
- 6 large potatoes, quartered
- 2 ribs celery, chopped
- 1/4 cup onion, chopped
- 2 hard-boiled eggs, chopped
- 1 hard-boiled egg, sliced
- 3 tablespoons sweet pickle relish
- 1 cup Miracle Whip
- 1 tablespoons yellow mustard
- 2 tsp. cider vinegar
- 1 tsp. celery seed
- Paprika, for garnish
- Pinch of salt
Directions:
Boil quartered potatoes until tender. Drain and cool. In a small bowl stir together the pickled relish, Miracle Whip, yellow mustard, vinegar, and celery seed. Set aside. In a large bowl combine potatoes cut into bite sized chunks, onion, celery and two chopped boiled eggs. Pour the mayo mix over top and fold it in. Slice the third egg and arrange slices on top. Sprinkle with paprika and salt. Refrigerate several hours before serving to combine flavors.
