Pecan Tassies

Is there anyone who does not love a Pecan Tassie? These are a favorite at cookie exchanges and the first to disappear from holiday cookie trays. My family did not discover them until fairly recently but once we found this recipe, these treats soared to the top of everyone’s list as a holiday “must have.”

Ingredients

  • ½ cup butter or margarine, softened
  • 3 oz cream cheese, softened
  • 1 cup (all-purpose flour
  • 2 tbsp butter or margarine, melted
  • ¾ cup packed brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup pecans, finely chopped

Directions

Preheat the oven to 350°F. Beat the butter and cream cheese until well blended. Add the flour; mix until a soft dough forms.

Shape the dough into 1″ balls. Place each dough ball into the ungreased cups of a mini muffin pan. Press the dough to fit the form of the pan.

For the filling: Stir melted butter together wih the brown sugar, egg, and vanilla. Finely chop the pecans and add them to the batter. Mix well.

Fill each shell with a level scoop of the filling. Do not overfill. Bake for 20-25 minutes or until the cookies are light golden brown. Remove the pan from the oven, and let the cookies cool in the pan for a few minutes until firm. Remove from pan and cool. Garnish if desired.
