Jiffy Corn Casserole

My family is not a fan of the traditional green bean casserole that is popular at holiday time.. Many years ago my Mom found some side dish alternatives that even the kids would eat. One of our Thanksgiving and Christmas dinner favorites is this simple corn casserole or “corn pudding.” You can make this the day before and quickly reheat in the microwave to save oven space.

Ingredients

Preheat the oven to 350 degrees.

  • 2 large eggs
  • 1/2 cup melted butter, cooled
  • 1 package (8.5 oz.) Jiffy corn bread mix
  • 1 can (15 oz) whole kernel corn
  • 1 can (15 oz) creamed corn
  • 1 cup sour cream

In a medium bowl combine all ingredients. Pour and spread evenly into an 8×8 baking dish that has been sprayed with non-stick cooking spray. Bake for 45 to 50 minutes.

I’m the person who created it from a very old, lost, then re-found “recipe.” I worked at Meredith Corporation at the time, and they published the recipe and photos.
