Packed full of holiday spices, there’s no mistaking the flavor of this spicy gingerbread treat. These cookies can be rolled and cut into gingerbread men or made into traditional soft and chewy rounds.
- 2 cups sifted all-purpose flour
- 1 T. ground ginger
- 1 tsp. ground cinnamon
- 2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 cup shortening
- 1 cup sugar
- 1 egg, unbeaten
- 1/4 cup molasses
- granulated sugar
Measure flour, ginger, cinnamon, soda, salt, and cinnamon into sifter. Sift two times. Cream shortening until soft in a medium sized bowl; add sugar gradually until well blended. Beat in egg and molasses. Sift dry ingredients again over the creamed mixture and blend. Form into balls and roll in granulated sugar. Place on ungreased cookie sheet, flatten slightly with the bottom of a glass, and bake at 350º for 12 to 15 minutes. Dough can also be rolled to 1/4 – 1/3″ thick and cut into shapes. Sprinkle with granulated sugar prior to baking.
