1 cup all-purpose flour
1/4 cup confectioners’ sugarFilling:
2 large eggs
1 cup granulated sugar
2 tablespoons lemon juice
2 tablespoons all-purpose flour
a pinch of salt
Preheat oven to 350°F. Cut the butter into the flour and confectioners’ sugar and press into a 9-inch square pan. Bake 20 minutes or until light brown.
Combine all filling ingredients. Pour filling over the baked and still hot crust. Continue baking for 25 minutes. Cool. Sprinkle top with confectioners’ sugar. Store in the refrigerator.
