I love Ambrosia salads but find many of them to be too wimpy. This one is rich and creamy and has enough body to hold up in the fridge for several days so there’s no problem making it the day ahead of a big, busy holiday meal. For a summer treat try using Strawberry Jello and substituting fresh, garden strawberries and blueberries in place of the oranges and pineapple.
Orange Jello Fluff Salad
- 1 large box cook and serve vanilla pudding
- 1 large box orange Jello
- 2 cups water
- 1 16 oz. tub Cool Whip
- 1 20 0z. can crushed pineapple, drained
- 2 15 oz. cans mandarin oranges, drained
- 1/2 bag mini marshmallows
Mix pudding, Jello and water in a saucepan and bring to a boil. Remove from heat and chill for one hour or overnight until set. When set, whip with an electric mixer until creamy. Blend in Cool Whip, oranges, pineapple and marshmallows. Mix well. Refrigerate for at least one hour before serving.
